Passion Fruit: A citrus-like, sweet-sour flavor. But the hallmark is a powerfully overwhelming sweet perfume bouquet! A popular local fruit drink is orange-passion mix. Local Hawaiian name of the fruit is ‘Lilikoi’. I have a receipe for making a butter-spread with a sweet fruit flavor that brings tears…. (pardon my drool!) Irish would swear off banana splits for life after tasting this.
Lilikoi Butter
1 cup sugar
1/4 cup lemon juice
1/4 cup fresh lilikoi juice (not from concentrate)
4 eggs, beaten
5 tablespoons butter In a small saucepan over medium heat, combine sugar, lemon juice and lilikoi juice; stir until sugar is dissolved.
Whisk a little of the lilikoi mixture into eggs to temper them, then return the whole mixture to the saucepan, stirring constantly over medium-low heat until mixture is thick enough to coat a spoon.
Remove from heat, add butter and stir until melted. Pour into sterilized jars and seal. Makes about 1-1/2 cups.
